Pinterest Finds: Reese’s Peanut Butter Banana Bread Recipe

If you haven’t joined the world of Pinterest yet, YOU SHOULD! I describe it as Google-like, but more streamlined and completely visual. Pinterest is all about pins…pictures of things people have uploaded that they think are interesting, beautiful, inspiring, enticing, great ideas, etc. Whether you’re looking for vibrant skinny jeans or cake batter milkshakes (both recent faves of mine, listed in sidebar to the left), I bet you can find a picture of it on Pinterest. And 9 times out of 10, that pin will be connected to a link where you can visit a website to find out more, which is especially great if it’s something you want to buy! Even if you don’t know what you’re looking for, you’ll find something interesting…guaranteed! I never intended to find a bunch of great food recipes on Pinterest, but there’s so many pins of DELICIOUS looking food that it’s hard to ignore the recipes behind them.

So that’s what my first “Pinterest Finds” series post is about…Reese’s Peanut Butter Banana Bread, a delish recipe that I found on Pinterest! I am not claiming this as an original of my kitchen, but a recipe I eventually found here. So the following is an adaption of Cookies and Cups‘ recipe:

Ingredients

  • 3 very ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups of all purpose flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 oz bag of Reese’s Mini cups

Note: I was unable to find an 8 oz bag of the Reese’s Minis, so I bought the 2.5 oz snack bags instead. I thought I’d find the 8 oz bags in the baking aisle or candy aisle, but no luck. 🙁

Instructions

  • Preheat oven to 350 degrees and grease loaf pan with butter or shortening (I used a 9×5 pan and Pam spray).
  • In a medium bowl, mix together dry ingredients: flour, baking soda, baking powder, and salt.
  • In a large bowl, stir together bananas, peanut butter, oil, egg, and sugars.
  • Pour dry ingredients into wet ingredients and stir to combine; batter will be lumpy.
  • Fold in Reese’s Minis and spread batter into pan.

  • Bake for about 1 hour. Check with a toothpick, if clean, it’s done!
  • Let cool for 10 minutes (we actually wanted to eat the warm gooey-ness of the chocolate, so we didn’t wait that long!).

 

This was so easy to make and we ate it up in just a couple of days. But we did have some friends here to help us. 🙂 It was great as dessert and breakfast! For a healthier loaf, use reduced fat peanut butter and substitute applesauce for oil. You could also try using egg whites instead of the whole egg, but I’m thinking you might need two. The best decision I could have made for my wedding was hiring Jessica Fike as a photographer!
